Restaurant Chicken!

It's actually called Anniversary chicken, but Aaron didn't like the name, and said it tastes like restaurant food. So there you go. So easy, and really good!

2 Tbsp vegetable oil
6 skinless, boneless, chicken breasts
1/2 cup Bbq sauce
1/2 ranch salad dressing
1 cup shredded cheddar cheese
3 green onions, chopped
bacon bits

Preheat oven to 350 degrees F.

In a large skillet, heat oil over medium high heat. Add chicken breasts and saute 4-5 minutes each side, until lightly browned

Place chicken breasts in a 9X13 baking dish. Brush with bbq sauce, then spoon on salad dressing. Sprinkle with cheese, green onions and bacon bits.

Bake for 25-35 minutes or until chicken is no longer pink and juices run clear.

Tony Roma's Baked Potato Soup

Aaron and I LOVE their soup! So i was super excited when i found a recipe that tastes just like it!!!!!!!

Ingredients:
2 medium potatoes (about 2 cups chopped)
3 Tbsp butter
1 cup diced white onion
2 Tbsp flour
4 cups chicken stock
2 cups water
1 1/2 cups instant mashed potatoes (like pearls, or flakes)
1 tsp salt
3/4 tsp pepper
1/2 tsp basil
1/8 tsp thyme
1 cup half and half

Garnish-
1/2 cup shredded cheddar cheese
1/4 cup crumbled cooked bacon
2 green onions, chopped

Bake potatoes and cool. Prepare soup by melting butter in a large saucepan, and saute the onion until light brown. Add the flour to the onions and stir to make a roux. Add stock, water, mashed potatoes, and spices to the pot and bring to a boil. Reduce heat and simmer for 5 minutes. Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Chopped baked potato to make chunks. Add chopped baked potato and half and half to the saucepan, bring soup back to a boil then reduce heat and simmer the soup for another 15 minutes, or until it is thick.
Add garnish, and enjoy!
Serves 6-8

Cheaters Chicken Caccitore

6 skinless, boneless chicken breast halves

1 (28 ounce) jar spaghetti sauce

2 green bell pepper, seeded and cubed

8 ounces fresh mushrooms, sliced

1 onion, finely diced

2 tablespoons minced garlic

Put the chicken in the slow cooker. Top with the spaghetti sauce, green bell peppers, mushrooms, onion and garlic. Cook on low for 7 to 9 hours. Serve!

Yield: 5 Servings
Made this today. Looks, smells and tastes great! Took 5 mins to throw it in!

Beef Enchiladas

We tried these out for dinner tonight, they were really good!!!!

Ingredients
1 lb ground beef
1 cup cottage cheese
1 (4.25 oz) can ripe olives
2 Tbsp minced fresh parsley
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
8 flour tortillas

Sauce
1 medium onion, chopped
1/2 medium green pepper, chopped
1 Tbsp cooking oil
1 (15 oz) can tomato sauce
1 (4 oz) can chopped green chilies
2 tsp chili powder
1 tsp sugar
1/2 tsp garlic powder

1 cup shredded cheddar cheese

Directions

In a skillet, brown the ground beef. Drain. Combine with cottage cheese, olives, parsley, garlic powder, salt and pepper. Place about 1/3 cup filling on each tortilla, roll up. Place tortillas seam side down in a ungreased 9X13 baking dish. For sauce, saute the onion and green pepper in oil until tender. Add tomato sauce, green chilies, chili powder, sugar, and garlic powder. Pour over tortillas. Cover and bake at 350 degrees F for 30 minutes. Sprinkle with cheese and return to the oven for 5 minutes or until cheese melts.

BBQ Chicken Calzones

If you like BBQ Chicken pizza, you'll love these.

Ingredients:
3 cups shredded, cooked chicken breast meat
1/2 small onion chopped
2/3 cup BBQ sauce
4 slices bacon
1 cup grated mozza cheese
1 can refrigerated pizza crust dough

Directions:
Preheat the oven to 400 degrees F
Fry bacon in a large skillet over med-high heat until crisp. Remove from the pan to drain on paper towels, crumble. Add the onion and shredded chicken to the hot bacon grease in the pan. Fry over med heat until onion is tender. Stir in 1/3 cup bbq sauce, and remove from heat. Mix in the cooked bacon.

Roll the pizza dough onto a greased cookie sheet. Press out to an even thickness, and then cut in half. Divide the chicken mixture between the 2 pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge. Drizzle the remaining bbq sauce over the filling. Sprinkle the cheese over the top. Fold the uncovered portion of dough over the filling and press the edges together with a fork to seal.

Bake for 20-25 mins in the oven, or until browned to your liking. Cool for a few minutes the cut each calzone in half. Each serving is half of a calzone. Serve with additional bbq sauce, or if you're like us, with ranch dressing!

Waikiki Meatballs

INGREDIENTS:

1 1/2 pounds ground beef
2/3 cup crushed saltine cracker
crumbs
1/3 cup minced onion
1 egg
1/4 cup milk
1 1/2 teaspoons ground ginger
1/2 teaspoon salt
1 tablespoon olive oil

2 tablespoons cornstarch
1/2 cup packed brown sugar
1 (15 ounce) can pineapple
chunks - drained, with juice
reserved
1/3 cup white vinegar
1 tablespoon soy sauce
1/3 cup chopped green bell
pepper


DIRECTIONS:
1. In a large bowl, combine ground beef, cracker crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs.
2. Heat olive oil in a large skillet over medium heat. Place meatballs in skillet and cook until evenly brown, and meat is no longer pink. Drain excess fat.
3. In a small bowl, combine the cornstarch, brown sugar, reserved pineapple juice, vinegar and soy sauce. Mix until smooth, then pour into the skillet with meatballs. Cook, stirring constantly, until mixture thickens and boils, about 5 minutes. Stir in the green pepper and pineapple chunks. Heat through.
